Ingredients

  • 2 large cucumbers
  • 1 tsp salt
  • 2 tbsp Chinese black vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp chili oil
  • 1/2 tsp granulated sugar

Directions

  1. 1Smash the cucumbers with a cleaver or rolling pin and tear them into bite-size pieces.
  2. 2Toss the cucumber with salt and let it drain for 10 minutes.
  3. 3Mix black vinegar, soy sauce, sesame oil, garlic, chili oil, and sugar.
  4. 4Drain the cucumber well.
  5. 5Toss the cucumber with the dressing until coated.
  6. 6Serve immediately for the best crunch.
