Chinese chilled wood-ear mushroom salad with garlic, black vinegar, sesame oil, cilantro, and chile for a crisp, tangy cold side.

Ingredients

  • 2 oz dried wood ear mushrooms
  • 2 cloves garlic, finely minced
  • 2 tbsp Chinese black vinegar
  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp granulated sugar
  • 1/4 cup fresh cilantro, chopped
  • 1 small red chili pepper, thinly sliced
  • 1 tsp sesame seeds, toasted

Directions

  1. 1Soak dried wood ear mushrooms in cool water 20 minutes or until fully expanded, then trim away any tough bases.
  2. 2Bring a saucepan of water to a boil and cook the mushrooms 2 minutes, then drain and rinse under cold water.
  3. 3Whisk garlic, black vinegar, soy sauce, sesame oil, and sugar in a bowl.
  4. 4Add cooled mushrooms and chile and toss until evenly coated.
  5. 5Fold in cilantro and sesame seeds just before serving chilled.

💡 After soaking, trim any firm nub at the base of each mushroom; those pieces stay rubbery even after blanching.
