Ingredients

  • •1 cup all-purpose flour
  • •1/4 cup granulated sugar
  • •1/2 cup butter, softened
  • •2 large eggs
  • •1 cup granulated sugar
  • •2 tablespoons all-purpose flour
  • •1/2 teaspoon baking powder
  • •1/4 cup fresh lime juice
  • •1 tablespoon lime zest
  • •1/4 teaspoon salt
  • •2 tablespoons powdered sugar for dusting

Directions

  1. 1Preheat oven to 350°F and grease an 8x8 inch baking pan.
  2. 2Mix 1 cup flour, 1/4 cup sugar, and butter until combined, then press into the bottom of the pan. Bake for 10 minutes until lightly golden.
  3. 3In a bowl, whisk together eggs, 1 cup sugar, 2 tablespoons flour, baking powder, lime juice, lime zest, and salt until smooth.
  4. 4Pour the lime filling over the baked crust and bake for 15-20 minutes until the filling is set but still slightly jiggly in the center.
  5. 5Cool completely in the pan, then refrigerate for at least 1 hour before cutting.
  6. 6Cut into squares and dust with powdered sugar before serving.

💡 Lime bars need a complete chill before slicing; warm citrus custard drags across the shortbread and makes clean squares almost impossible.
