Lime Cake

Ingredients
- •1 3/4 cups all-purpose flour
- •1 1/2 teaspoons baking powder
- •1/2 teaspoon salt
- •1/2 cup unsalted butter, softened
- •1 cup granulated sugar
- •2 large eggs
- •3 tablespoons fresh lime juice
- •1 tablespoon lime zest
- •1/2 cup sour cream
- •1 cup powdered sugar
- •2 tablespoons fresh lime juice for glaze
Directions
- 1Preheat oven to 350°F and grease a 9-inch round cake pan. Whisk together flour, baking powder, and salt in a bowl.
- 2Cream butter and granulated sugar until light and fluffy, then beat in eggs one at a time. Mix in lime juice and zest.
- 3Alternate adding flour mixture and sour cream to the butter mixture, beginning and ending with flour, stirring until just combined.
- 4Pour batter into prepared pan and bake for 25-30 minutes until a toothpick inserted in center comes out clean.
- 5Cool cake in pan for 10 minutes, then turn out onto a wire rack to cool completely.
- 6Whisk powdered sugar and 2 tablespoons lime juice together until smooth, then drizzle over cooled cake.
