Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup sour cream
  • 1 cup powdered sugar
  • 2 tablespoons fresh lime juice for glaze

Directions

  1. 1Preheat oven to 350°F and grease a 9-inch round cake pan. Whisk together flour, baking powder, and salt in a bowl.
  2. 2Cream butter and granulated sugar until light and fluffy, then beat in eggs one at a time. Mix in lime juice and zest.
  3. 3Alternate adding flour mixture and sour cream to the butter mixture, beginning and ending with flour, stirring until just combined.
  4. 4Pour batter into prepared pan and bake for 25-30 minutes until a toothpick inserted in center comes out clean.
  5. 5Cool cake in pan for 10 minutes, then turn out onto a wire rack to cool completely.
  6. 6Whisk powdered sugar and 2 tablespoons lime juice together until smooth, then drizzle over cooled cake.
