Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar
  • 2 tablespoons lime juice for glaze

Directions

  1. 1Preheat oven to 350°F and line baking sheets with parchment paper.
  2. 2Cream together butter and granulated sugar until light and fluffy, then beat in egg, lime juice, and lime zest.
  3. 3In a separate bowl, whisk together flour, baking powder, and salt, then fold into the wet ingredients until combined.
  4. 4Drop rounded tablespoons of dough onto prepared baking sheets and bake for 10-12 minutes until edges are lightly golden.
  5. 5Cool cookies on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  6. 6Mix powdered sugar with 2 tablespoons lime juice to create a glaze and drizzle over cooled cookies.
