Cantonese radish cake steamed with rice flour, dried shrimp, and Chinese sausage, then pan-crisped into savoury slices.

Ingredients

  • 2 lb daikon radish, coarsely grated
  • 2 cups rice flour
  • 2 cups water
  • 4 oz Chinese sausage, finely diced
  • 1/3 cup dried shrimp, soaked and chopped
  • 3 green onions, sliced
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1/4 tsp white pepper
  • 1/2 tsp salt

Directions

  1. 1Cook the grated daikon with 1 cup water for 8 minutes until softened.
  2. 2Fry the Chinese sausage and dried shrimp in 1 tablespoon oil for 4 minutes.
  3. 3Mix rice flour, remaining water, soy sauce, white pepper, and salt into a batter.
  4. 4Combine daikon, sausage mixture, green onions, and batter, then spread in an oiled pan.
  5. 5Steam for 40 minutes until firm, then cool completely before slicing.
  6. 6Pan-fry the slices in remaining oil for 2–3 minutes per side until crisp.

💡 Chill the steamed cake before slicing if possible; cold lo bak go cuts cleanly and crisps without breaking.
