Lobiani (Georgian Bean-Filled Bread)

Georgian yeast bread stuffed with a savoury red-bean filling seasoned with onion, coriander, and blue fenugreek.

Ingredients

  • 3 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 1/4 cups warm water
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 2 cans (15 oz each) canned red kidney beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 1 tsp ground coriander
  • 1/2 tsp blue fenugreek
  • 1/4 tsp black pepper

Directions

  1. 1Mix flour, yeast, half the salt, warm water, and 1 tablespoon oil into a soft dough.
  2. 2Knead for 7 minutes, cover, and let the dough rise for 60 minutes.
  3. 3Cook onion in remaining oil for 5 minutes, then add beans, coriander, blue fenugreek, salt, and black pepper.
  4. 4Mash the bean filling roughly and cool it for 10 minutes.
  5. 5Divide dough and filling into six portions, enclosing the beans inside flattened dough rounds.
  6. 6Bake at 425°F (220°C) for 18–20 minutes until puffed and golden.

💡 Cool the bean filling before sealing the dough; hot filling weakens the bread and makes the seams difficult to pinch shut.
