Lobiani (Georgian Bean-Filled Bread)
Georgian yeast bread stuffed with a savoury red-bean filling seasoned with onion, coriander, and blue fenugreek.

Ingredients
- •3 cups all-purpose flour
- •2 tsp instant yeast
- •1 1/4 cups warm water
- •1 tsp salt
- •2 tbsp vegetable oil
- •2 cans (15 oz each) canned red kidney beans, drained and rinsed
- •1 medium yellow onion, diced
- •1 tsp ground coriander
- •1/2 tsp blue fenugreek
- •1/4 tsp black pepper
Directions
- 1Mix flour, yeast, half the salt, warm water, and 1 tablespoon oil into a soft dough.
- 2Knead for 7 minutes, cover, and let the dough rise for 60 minutes.
- 3Cook onion in remaining oil for 5 minutes, then add beans, coriander, blue fenugreek, salt, and black pepper.
- 4Mash the bean filling roughly and cool it for 10 minutes.
- 5Divide dough and filling into six portions, enclosing the beans inside flattened dough rounds.
- 6Bake at 425°F (220°C) for 18–20 minutes until puffed and golden.
💡 Cool the bean filling before sealing the dough; hot filling weakens the bread and makes the seams difficult to pinch shut.
