Ingredients

  • 3 cans (15 oz each) canned red kidney beans, drained and rinsed
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup walnuts, finely chopped
  • 1 tsp ground coriander
  • 1/2 tsp blue fenugreek
  • 2 tbsp red wine vinegar
  • 1/3 cup fresh cilantro, chopped
  • 2 tbsp vegetable oil
  • 1 1/2 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Heat vegetable oil in a pot and cook onion for 7 minutes until soft and lightly golden.
  2. 2Add garlic, coriander, and blue fenugreek and cook for 30 seconds until fragrant.
  3. 3Stir in kidney beans, water, salt, and black pepper and bring to a simmer.
  4. 4Cook uncovered for 20 minutes, crushing some beans against the pot to thicken the liquid.
  5. 5Stir in walnuts and red wine vinegar and cook 3 minutes more.
  6. 6Fold in cilantro and serve warm or at room temperature.

💡 Crush only part of the beans; lobio should be thick and cohesive while still retaining plenty of whole beans.
