Lobio (Georgian Stewed Beans)
Georgian red beans simmered with onion, garlic, coriander, walnuts, and blue fenugreek until thick, earthy, and deeply aromatic.

Ingredients
- •3 cans (15 oz each) canned red kidney beans, drained and rinsed
- •1 large yellow onion, finely diced
- •3 cloves garlic, minced
- •1/2 cup walnuts, finely chopped
- •1 tsp ground coriander
- •1/2 tsp blue fenugreek
- •2 tbsp red wine vinegar
- •1/3 cup fresh cilantro, chopped
- •2 tbsp vegetable oil
- •1 1/2 cups water
- •1 tsp salt
- •1/2 tsp black pepper
Directions
- 1Heat vegetable oil in a pot and cook onion for 7 minutes until soft and lightly golden.
- 2Add garlic, coriander, and blue fenugreek and cook for 30 seconds until fragrant.
- 3Stir in kidney beans, water, salt, and black pepper and bring to a simmer.
- 4Cook uncovered for 20 minutes, crushing some beans against the pot to thicken the liquid.
- 5Stir in walnuts and red wine vinegar and cook 3 minutes more.
- 6Fold in cilantro and serve warm or at room temperature.
💡 Crush only part of the beans; lobio should be thick and cohesive while still retaining plenty of whole beans.
