Lobster Bisque
A luxurious, creamy soup with tender lobster meat and a rich, velvety tomato-cream base.

Ingredients
- •2 tablespoons butter
- •1 medium onion, diced
- •2 cloves garlic, minced
- •2 tablespoons tomato paste
- •4 cups lobster or seafood stock
- •1 cup heavy cream
- •1 pound lobster meat, chopped
- •2 tablespoons brandy or dry sherry
- •1 bay leaf bay leaf
- •to taste Salt and pepper
Directions
- 1Melt butter in a large pot over medium heat and sauté diced onion until softened, about 5 minutes. Add garlic and cook for 1 minute.
- 2Stir in tomato paste and cook for 2 minutes, then deglaze with brandy, scraping up any browned bits.
- 3Add seafood stock and bay leaf, bring to a simmer and cook for 15 minutes to develop flavors.
- 4Stir in heavy cream and lobster meat, then gently simmer for 10 minutes until heated through.
- 5Season with salt and pepper to taste, remove bay leaf, and serve hot in bowls.
