Locro
A hearty Argentine stew loaded with tender beef, potatoes, corn, and squash in a rich, aromatic broth.

Ingredients
- •2 pounds beef chuck, cut into 1-inch cubes
- •3 tablespoons vegetable oil
- •1 large onion, diced
- •4 cloves garlic, minced
- •2 teaspoons cumin
- •1 teaspoon paprika
- •4 medium potatoes, cut into chunks
- •2 cups corn kernels
- •1 pound butternut squash, cubed
- •6 cups beef broth
- •1 can (15 oz) white beans, drained
- •to taste Salt and pepper
Directions
- 1Heat oil in a large pot over medium-high heat and brown the beef cubes on all sides, about 8 minutes total. Remove and set aside.
- 2In the same pot, sauté diced onion until softened, about 5 minutes. Add garlic, cumin, and paprika, cooking for 1 minute until fragrant.
- 3Return beef to the pot and pour in beef broth. Bring to a boil, then reduce heat and simmer for 30 minutes covered.
- 4Add potatoes, butternut squash, and corn. Simmer for 20 minutes until vegetables begin to soften.
- 5Stir in white beans and simmer for another 10 minutes until all vegetables are tender.
- 6Season with salt and pepper to taste and serve hot in bowls.
