Lomo Saltado

Tender strips of beef stir-fried with tomatoes, onions, and peppers, served over crispy golden fries for a beloved Peruvian classic.

Ingredients

  • 1.5 lbs beef sirloin, cut into thin strips
  • 3 tablespoons vegetable oil
  • 1 large red onion, cut into wedges
  • 2 medium tomatoes, cut into wedges
  • 1 red bell pepper, cut into strips
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • salt to taste salt
  • 4 cups French fries, cooked
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. 1Heat 2 tablespoons of oil in a large skillet or wok over high heat until very hot.
  2. 2Season beef strips with salt and pepper, then cook in batches for 2-3 minutes until browned. Set aside.
  3. 3Add remaining oil to the skillet and sauté the red onion for 2 minutes until slightly softened.
  4. 4Add garlic and bell pepper, cooking for another minute until fragrant.
  5. 5Return beef to the skillet and add tomato wedges, soy sauce, vinegar, and cumin. Toss everything together for 2-3 minutes until heated through.
  6. 6Arrange cooked French fries on a serving platter and top with the lomo saltado mixture.
  7. 7Garnish with fresh cilantro and serve immediately with lime wedges and hot sauce on the side.
