Lu Rou Fan (Taiwanese Braised Pork Rice Bowl)

Ingredients
- •1 1/2 lb ground pork
- •6 oz shiitake mushrooms, finely chopped
- •4 shallots, thinly sliced
- •3 cloves garlic, minced
- •1/3 cup soy sauce
- •1/4 cup rice wine
- •2 tbsp brown sugar
- •1/2 tsp five-spice powder
- •2 cups water
- •3 hard-boiled eggs
- •6 cups cooked white rice
- •1 cup pickled mustard greens
Directions
- 1Cook shallots in a saucepan until deeply golden, then add garlic and mushrooms.
- 2Add ground pork and cook for 6 minutes until no longer pink.
- 3Stir in soy sauce, rice wine, brown sugar, five-spice, and water.
- 4Add hard-boiled eggs and simmer uncovered for 30 minutes until the pork is glossy.
- 5Slice the braised eggs in half.
- 6Serve the pork and eggs over rice with pickled mustard greens.
