Ingredients
- •2 lbs beef chuck, cut into 1-inch cubes
- •1 cup natural peanut butter
- •2 tablespoons vegetable oil
- •1 large onion, chopped
- •4 cloves garlic, minced
- •3 cups beef broth
- •2 large carrots, cut into chunks
- •2 medium potatoes, cut into chunks
- •1 can (14 oz) diced tomatoes
- •1 teaspoon cayenne pepper
- •1 teaspoon salt
- •½ teaspoon black pepper
Directions
- 1Heat oil in a large pot over medium-high heat and brown the beef on all sides, about 5 minutes; remove and set aside.
- 2In the same pot, sauté onion and garlic until softened, about 2 minutes.
- 3Stir in peanut butter until well combined with the onion mixture.
- 4Add beef broth, tomatoes with juice, cayenne pepper, salt, and black pepper; stir well.
- 5Return beef to the pot and bring to a simmer; cover and cook for 20 minutes.
- 6Add carrots and potatoes, stir well, and continue simmering covered for 20 minutes until vegetables are tender and beef is cooked through.
- 7Taste and adjust seasonings as needed, then serve hot over rice.
