Maakouda (Moroccan Potato Fritters)

Spiced mashed potato patties fried crisp, sold from carts and stuffed into bread with harissa.

Ingredients

  • 600 g potatoes
  • 2 eggs
  • 2 tbsp cilantro, chopped
  • 1 tsp cumin
  • 2 garlic cloves, minced
  • 80 g all-purpose flour
  • 500 ml neutral oil, for frying

Directions

  1. 1Boil the potatoes twenty minutes until completely soft, then drain and mash them smooth.
  2. 2Mix in one egg, the cilantro, cumin, garlic and plenty of salt.
  3. 3Shape into flat patties about a centimetre and a half thick.
  4. 4Beat the second egg in one dish and put the flour in another.
  5. 5Dip each patty in flour, then egg, letting the excess run off.
  6. 6Fry four minutes a side until deep golden and crusted, then drain.

💡 Flour first, then egg. Doing it the other way round leaves a coating that slides off in the pan.
