Ingredients
- •600 g potatoes
- •2 eggs
- •2 tbsp cilantro, chopped
- •1 tsp cumin
- •2 garlic cloves, minced
- •80 g all-purpose flour
- •500 ml neutral oil, for frying
Directions
- 1Boil the potatoes twenty minutes until completely soft, then drain and mash them smooth.
- 2Mix in one egg, the cilantro, cumin, garlic and plenty of salt.
- 3Shape into flat patties about a centimetre and a half thick.
- 4Beat the second egg in one dish and put the flour in another.
- 5Dip each patty in flour, then egg, letting the excess run off.
- 6Fry four minutes a side until deep golden and crusted, then drain.
💡 Flour first, then egg. Doing it the other way round leaves a coating that slides off in the pan.
