- •3 very ripe plantains, black-spotted
- •1/3 cup vegetable oil
- •1/4 tsp salt
Directions
- 1Peel the very ripe plantains and slice them diagonally into 1-inch pieces.
- 2Heat vegetable oil in a skillet over medium heat.
- 3Add the plantain slices in a single layer without crowding the pan.
- 4Fry for 3 minutes per side until deeply golden and caramelized.
- 5Transfer the maduros to paper towel and season lightly with salt.
- 6Serve hot while the centres are soft and the edges remain crisp.
💡 Use plantains with mostly black skins; green or firm yellow plantains will not develop the soft, sweet centre that defines maduros.
