Ingredients

  • 3 very ripe plantains, black-spotted
  • 1/3 cup vegetable oil
  • 1/4 tsp salt

Directions

  1. 1Peel the very ripe plantains and slice them diagonally into 1-inch pieces.
  2. 2Heat vegetable oil in a skillet over medium heat.
  3. 3Add the plantain slices in a single layer without crowding the pan.
  4. 4Fry for 3 minutes per side until deeply golden and caramelized.
  5. 5Transfer the maduros to paper towel and season lightly with salt.
  6. 6Serve hot while the centres are soft and the edges remain crisp.

💡 Use plantains with mostly black skins; green or firm yellow plantains will not develop the soft, sweet centre that defines maduros.
