Mahshi - Stuffed Tomatoes and Peppers
Hollowed tomatoes and bell peppers filled with spiced rice and ground meat, then simmered in a tangy tomato sauce until tender.

Ingredients
- •4 large tomatoes
- •4 medium bell peppers (red or green)
- •1 pound ground beef or lamb
- •1 cup long-grain rice
- •1 medium onion, finely chopped
- •1 teaspoon ground cumin
- •1 teaspoon ground cinnamon
- •2 tablespoons tomato paste
- •2 cups vegetable or chicken broth
- •2 tablespoons olive oil
- •1 teaspoon salt
- •½ teaspoon black pepper
Directions
- 1Cut off the tops of tomatoes and peppers, then scoop out the insides using a spoon, reserving the pulp and keeping shells intact.
- 2Heat olive oil in a large pan over medium heat, sauté chopped onion until softened, then add ground meat and cook until browned.
- 3Stir in uncooked rice, tomato paste, cumin, cinnamon, salt, and pepper, cooking for 2 minutes until fragrant.
- 4Stuff the tomatoes and peppers with the meat-rice mixture, packing gently but not too tightly.
- 5Arrange stuffed vegetables upright in a baking dish, pour broth mixed with reserved tomato pulp around them.
- 6Cover with foil and bake at 350°F for 45 minutes until vegetables are tender and rice is cooked through.
- 7Remove foil, let rest for 5 minutes, then serve hot with the pan sauce spooned over top.
