Mahshi - Stuffed Tomatoes and Peppers

Hollowed tomatoes and bell peppers filled with spiced rice and ground meat, then simmered in a tangy tomato sauce until tender.

Ingredients

  • 4 large tomatoes
  • 4 medium bell peppers (red or green)
  • 1 pound ground beef or lamb
  • 1 cup long-grain rice
  • 1 medium onion, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 2 tablespoons tomato paste
  • 2 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Directions

  1. 1Cut off the tops of tomatoes and peppers, then scoop out the insides using a spoon, reserving the pulp and keeping shells intact.
  2. 2Heat olive oil in a large pan over medium heat, sauté chopped onion until softened, then add ground meat and cook until browned.
  3. 3Stir in uncooked rice, tomato paste, cumin, cinnamon, salt, and pepper, cooking for 2 minutes until fragrant.
  4. 4Stuff the tomatoes and peppers with the meat-rice mixture, packing gently but not too tightly.
  5. 5Arrange stuffed vegetables upright in a baking dish, pour broth mixed with reserved tomato pulp around them.
  6. 6Cover with foil and bake at 350°F for 45 minutes until vegetables are tender and rice is cooked through.
  7. 7Remove foil, let rest for 5 minutes, then serve hot with the pan sauce spooned over top.
