Manakish Za'atar (Lebanese Breakfast Flatbread)

Ingredients

  • 3 cups all-purpose flour
  • 1 1/4 cups warm water
  • 2 tsp instant yeast
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 2 tbsp, plus 1/3 cup for topping olive oil
  • 1/2 cup za'atar

Directions

  1. 1Mix flour, yeast, sugar, and salt, then add warm water and 2 tablespoons olive oil to form a soft dough.
  2. 2Knead for 7 minutes, cover, and let the dough rise for 60 minutes until doubled.
  3. 3Divide the dough into six balls and roll each into a thin round.
  4. 4Stir za'atar with the remaining olive oil into a loose paste.
  5. 5Spread the za'atar mixture over each round, leaving a narrow border.
  6. 6Bake at 475°F (245°C) for 8–10 minutes until puffed and lightly browned at the edges.

💡 Spread the za'atar oil nearly to the edge; a thick bare border makes the flatbread dry before the centre finishes baking.
