Ingredients

  • 1.5 lb pork tenderloin
  • 3 tbsp barbecue sauce
  • 2 tbsp maple syrup
  • 3 shallots, halved lengthwise
  • 1 cup Greek yogurt
  • 3 tbsp dill, fresh, chopped
  • 1 tbsp olive oil
  • to taste Salt and pepper

Directions

  1. 1Preheat oven to 425°F and heat an oven-safe skillet over medium-high heat.
  2. 2Pat pork dry and season generously with salt and pepper on all sides.
  3. 3Add olive oil to skillet; sear pork 2 minutes per side until golden brown all over.
  4. 4Stir barbecue sauce and maple syrup together; brush half over pork.
  5. 5Add shallots cut-side down around pork in skillet.
  6. 6Roast in oven 18-20 minutes, brushing with remaining glaze halfway through.
  7. 7Rest pork 5 minutes, then slice; stir dill into yogurt and season with salt.
  8. 8Serve sliced pork over roasted shallots with dill yogurt sauce alongside.
