Ingredients

  • 1.5 lb pork tenderloin
  • 3 tbsp barbecue sauce
  • 2 tbsp maple syrup
  • 3 shallots, halved lengthwise
  • 1 cup Greek yogurt
  • 2 tbsp dill, fresh, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

  1. 1Preheat oven to 425°F and line a baking sheet with foil.
  2. 2Pat pork tenderloin dry, then rub all over with olive oil, salt, and pepper.
  3. 3Whisk barbecue sauce and maple syrup together in a small bowl to make glaze.
  4. 4Brush half the glaze over pork; scatter shallots around it on the pan.
  5. 5Roast 20 minutes, brush remaining glaze over pork, then roast 5 more minutes.
  6. 6Rest pork 5 minutes before slicing into medallions.
  7. 7Stir together Greek yogurt and dill; season lightly with salt.
  8. 8Serve sliced pork and roasted shallots with dill yogurt on the side.
