- •3 tbsp barbecue sauce
- •2 tbsp maple syrup
- •3 shallots, halved lengthwise
- •1 cup Greek yogurt
- •2 tbsp dill, fresh, chopped
- •2 tbsp olive oil
- •1 tsp salt
- •0.5 tsp black pepper
Directions
- 1Preheat oven to 425°F and line a baking sheet with foil.
- 2Pat pork tenderloin dry, then rub all over with olive oil, salt, and pepper.
- 3Whisk barbecue sauce and maple syrup together in a small bowl to make glaze.
- 4Brush half the glaze over pork; scatter shallots around it on the pan.
- 5Roast 20 minutes, brush remaining glaze over pork, then roast 5 more minutes.
- 6Rest pork 5 minutes before slicing into medallions.
- 7Stir together Greek yogurt and dill; season lightly with salt.
- 8Serve sliced pork and roasted shallots with dill yogurt on the side.
