Ingredients

  • 2 cups blanched ground almonds
  • 2 cups powdered sugar
  • 1 egg white
  • 1 tablespoon rose water or almond extract
  • 1 tablespoon butter, softened
  • pinch salt
  • 2 tablespoons cocoa powder (optional, for coating)
  • 1/4 cup melted dark chocolate (optional)

Directions

  1. 1Combine blanched ground almonds and powdered sugar in a large bowl, mixing well to combine.
  2. 2In a separate bowl, lightly beat the egg white with rose water, butter, and salt.
  3. 3Add the wet ingredients to the dry ingredients and mix until a thick paste forms.
  4. 4Knead the mixture on a powdered sugar-dusted surface for 2-3 minutes until smooth and pliable.
  5. 5Roll the marzipan into small balls or shape into logs, then flatten as desired.
  6. 6Coat with cocoa powder, dip in melted chocolate, or leave plain, then refrigerate for 15 minutes until firm.
