Masala Dal

Ingredients
- •1 cup split yellow lentils (toor dal)
- •3 cups water
- •2 tablespoons ghee or vegetable oil
- •1 teaspoon cumin seeds
- •1 onion, finely chopped
- •2 cloves garlic, minced
- •1 tablespoon ginger, grated
- •2 tomatoes, diced
- •1 teaspoon turmeric powder
- •1 teaspoon red chili powder
- •1 teaspoon coriander powder
- •to taste salt
Directions
- 1Rinse the lentils under cold water and cook with 3 cups of water in a pot over medium heat until soft and mushy, about 15-20 minutes, stirring occasionally.
- 2Heat ghee in a separate pan and add cumin seeds, letting them crackle for 30 seconds.
- 3Add chopped onion and cook until golden brown, about 3-4 minutes.
- 4Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
- 5Add diced tomatoes and cook until softened, about 2 minutes.
- 6Add turmeric, red chili powder, and coriander powder, stirring well to combine.
- 7Pour this spiced mixture into the cooked lentils, stir well, and simmer for 5 minutes.
- 8Season with salt to taste and serve hot with rice or Indian bread.
