Masala Dosa
A crispy, golden crepe filled with spiced potatoes and onions, served with tangy sambar and creamy coconut chutney.

Ingredients
- •1 cup rice
- •1/3 cup urad dal (white lentils)
- •1/4 teaspoon fenugreek seeds
- •1/2 teaspoon salt
- •2 medium potatoes
- •1 small onion
- •2 tablespoons oil
- •1 teaspoon mustard seeds
- •1 teaspoon cumin seeds
- •2 green chilies
- •1/4 teaspoon turmeric powder
- •1/2 cup fresh cilantro
Directions
- 1Soak rice, urad dal, and fenugreek seeds in water for 4 hours, then grind into a smooth batter with salt and let it ferment overnight.
- 2Boil and cube potatoes, then fry with oil, mustard seeds, cumin seeds, chopped green chilies, onions, and turmeric until golden.
- 3Heat oil on a nonstick griddle, pour thin layer of batter in circular motion to form crepe, and cook until edges lift easily.
- 4Place spiced potato filling on crepe, fold in half, and transfer to plate.
- 5Serve hot dosa with sambar and coconut chutney.
