Masala Dosa

A crispy, golden crepe filled with spiced potatoes and onions, served with tangy sambar and creamy coconut chutney.

Ingredients

  • 1 cup rice
  • 1/3 cup urad dal (white lentils)
  • 1/4 teaspoon fenugreek seeds
  • 1/2 teaspoon salt
  • 2 medium potatoes
  • 1 small onion
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 green chilies
  • 1/4 teaspoon turmeric powder
  • 1/2 cup fresh cilantro

Directions

  1. 1Soak rice, urad dal, and fenugreek seeds in water for 4 hours, then grind into a smooth batter with salt and let it ferment overnight.
  2. 2Boil and cube potatoes, then fry with oil, mustard seeds, cumin seeds, chopped green chilies, onions, and turmeric until golden.
  3. 3Heat oil on a nonstick griddle, pour thin layer of batter in circular motion to form crepe, and cook until edges lift easily.
  4. 4Place spiced potato filling on crepe, fold in half, and transfer to plate.
  5. 5Serve hot dosa with sambar and coconut chutney.
