Massaman Curry
A rich and aromatic Thai curry with tender beef, potatoes, and peanuts in a warming blend of spices.

Ingredients
- •3 tablespoons massaman curry paste
- •1.5 pounds beef chuck, cubed
- •1 can (13.5 oz) coconut milk
- •1 cup beef broth
- •3 medium potatoes, cubed
- •1 medium onion, cut into chunks
- •0.75 cup roasted peanuts
- •2 tablespoons fish sauce
- •1 tablespoon palm sugar
- •3 cloves garlic, minced
- •2 tablespoons oil
Directions
- 1Heat oil in a large pot over medium-high heat and fry the massaman curry paste for 2 minutes until fragrant.
- 2Add beef cubes and brown on all sides for 5 minutes.
- 3Pour in coconut milk and beef broth, then add garlic and bring to a simmer.
- 4Add potatoes, onion, fish sauce, and palm sugar, then cover and simmer for 20 minutes until potatoes are tender.
- 5Stir in peanuts and simmer uncovered for 5 more minutes.
- 6Taste and adjust seasoning with additional fish sauce or sugar as needed, then serve over jasmine rice.
