Mayak Eggs (Korean Soy-Marinated Eggs)

Korean soft-boiled eggs marinated with soy sauce, sesame, scallion, garlic, and chile for a make-ahead protein snack or rice topping.

Ingredients

  • 8 eggs
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 2 tbsp granulated sugar
  • 1 tbsp rice vinegar
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds

Directions

  1. 1Boil the eggs for 6 1/2 minutes, then transfer immediately to ice water.
  2. 2Peel the cooled eggs carefully and place them in a snug container.
  3. 3Mix soy sauce, water, sugar, rice vinegar, green onions, garlic, chili, sesame oil, and sesame seeds.
  4. 4Pour the marinade over the eggs, turning them so every surface is coated.
  5. 5Cover and refrigerate for at least 8 hours.
  6. 6Serve chilled, halved over rice, or packed as a savoury snack.

💡 Use a snug container so the marinade reaches high on each egg; otherwise the colour and seasoning develop unevenly.
