Mayak Eggs (Korean Soy-Marinated Eggs)
Korean soft-boiled eggs marinated with soy sauce, sesame, scallion, garlic, and chile for a make-ahead protein snack or rice topping.

Ingredients
- •8 eggs
- •1/2 cup soy sauce
- •1/2 cup water
- •2 tbsp granulated sugar
- •1 tbsp rice vinegar
- •3 green onions, sliced
- •2 cloves garlic, minced
- •1 red chili, thinly sliced
- •1 tsp sesame oil
- •1 tbsp sesame seeds
Directions
- 1Boil the eggs for 6 1/2 minutes, then transfer immediately to ice water.
- 2Peel the cooled eggs carefully and place them in a snug container.
- 3Mix soy sauce, water, sugar, rice vinegar, green onions, garlic, chili, sesame oil, and sesame seeds.
- 4Pour the marinade over the eggs, turning them so every surface is coated.
- 5Cover and refrigerate for at least 8 hours.
- 6Serve chilled, halved over rice, or packed as a savoury snack.
💡 Use a snug container so the marinade reaches high on each egg; otherwise the colour and seasoning develop unevenly.
