Mediterranean Orzo Salad

A refreshing, colorful pasta salad bursting with fresh vegetables, feta cheese, and a bright lemon vinaigrette.

Ingredients

  • 2 cups orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1 cup kalamata olives, pitted and halved
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • to taste salt and black pepper

Directions

  1. 1Cook orzo according to package directions until al dente; drain and rinse with cold water until cooled.
  2. 2In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the dressing.
  3. 3In a large bowl, combine cooled orzo, tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  4. 4Pour the dressing over the salad and toss gently until everything is well coated.
  5. 5Refrigerate for at least 15 minutes before serving, or serve immediately at room temperature.
