Ingredients

  • •1 cup quinoa
  • •2 cups vegetable broth (gluten-free)
  • •1 cup cherry tomatoes, halved
  • •1 cucumber, diced
  • •1 red bell pepper, chopped
  • •1/2 cup kalamata olives
  • •1/2 cup feta cheese, crumbled
  • •1/4 cup hummus
  • •2 tablespoons olive oil
  • •1 tablespoon lemon juice
  • •1 teaspoon salt and pepper

Directions

  1. 1Rinse quinoa under cold water and combine with vegetable broth in a pot.
  2. 2Bring to a boil, then reduce heat and simmer for 15 minutes until quinoa is tender and liquid is absorbed.
  3. 3While quinoa cooks, prepare all vegetables and combine in a large bowl.
  4. 4In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. 5Fluff quinoa with a fork and let cool for 2 minutes.
  6. 6Divide quinoa between two bowls and top with vegetables, olives, and feta cheese.
  7. 7Drizzle with dressing and add a dollop of hummus to each bowl before serving.

💡 Rinse quinoa thoroughly before cooking this bowl. Residual saponins can taste bitter enough to compete with mild vegetables, feta, and lemon.
