Mediterranean Spinach & Caper Orzo

Tender orzo tossed with wilted spinach, briny capers, and toasted almonds in a garlicky lemon olive oil sauce — elegant enough for date night, easy enough for Tuesday.

Ingredients

  • 12 oz orzo pasta
  • 5 oz spinach, fresh
  • 3 tbsp capers, drained
  • 1/3 cup almonds, roughly chopped
  • 4 cloves garlic, minced
  • 4 tbsp olive oil
  • 1 tsp garlic powder
  • 1 lemon lemon, zested and juiced

Directions

  1. 1Boil a large pot of salted water and cook orzo 8–9 minutes until al dente, then drain.
  2. 2Toast chopped almonds in a dry skillet over medium heat 2–3 minutes until golden, then set aside.
  3. 3Heat olive oil in the same skillet over medium heat and sauté minced garlic 1 minute.
  4. 4Add capers and spinach to the skillet, tossing until spinach is fully wilted, about 2 minutes.
  5. 5Add drained orzo, garlic powder, lemon zest, and lemon juice, tossing everything together well.
  6. 6Plate orzo, top with toasted almonds, and drizzle extra olive oil over each serving.
