Mediterranean Spinach & Caper Orzo
Tender orzo tossed with wilted spinach, briny capers, and toasted almonds in a garlicky lemon olive oil sauce — elegant enough for date night, easy enough for Tuesday.

Ingredients
- •12 oz orzo pasta
- •5 oz spinach, fresh
- •3 tbsp capers, drained
- •1/3 cup almonds, roughly chopped
- •4 cloves garlic, minced
- •4 tbsp olive oil
- •1 tsp garlic powder
- •1 lemon lemon, zested and juiced
Directions
- 1Boil a large pot of salted water and cook orzo 8–9 minutes until al dente, then drain.
- 2Toast chopped almonds in a dry skillet over medium heat 2–3 minutes until golden, then set aside.
- 3Heat olive oil in the same skillet over medium heat and sauté minced garlic 1 minute.
- 4Add capers and spinach to the skillet, tossing until spinach is fully wilted, about 2 minutes.
- 5Add drained orzo, garlic powder, lemon zest, and lemon juice, tossing everything together well.
- 6Plate orzo, top with toasted almonds, and drizzle extra olive oil over each serving.
