Mediterranean Spinach & White Bean Skillet with Almonds and Capers

Ingredients
- •2 tbsp olive oil
- •4 cups spinach, fresh
- •2 cans (15 oz each) white beans, drained and rinsed
- •3 tbsp capers, drained
- •1/3 cup almonds, roughly chopped
- •1 tsp garlic powder
- •1 tbsp lemon juice, freshly squeezed
- •salt and black pepper seasoning, to taste
Directions
- 1Toast almonds in a dry skillet over medium heat for 3 minutes until golden; set aside.
- 2Add olive oil to the same skillet over medium-high heat.
- 3Stir in garlic powder and capers; sizzle for 1 minute until fragrant.
- 4Add white beans and cook 5 minutes, pressing some beans lightly to thicken sauce.
- 5Add spinach and toss until fully wilted, about 3 minutes.
- 6Drizzle lemon juice over skillet, top with toasted almonds, and season to serve.
