Ingredients
- •2 lbs pork shoulder, cubed
- •1 lb pork liver, cubed
- •3 tbsp cooking oil
- •1 medium onion, diced
- •4 cloves garlic, minced
- •1 can (8 oz) tomato sauce
- •3 medium potatoes, cubed
- •1 can (15 oz) chickpeas, drained
- •4 cups beef or pork broth
- •2 tsp salt
- •1/2 tsp black pepper
Directions
- 1Heat oil in a large pot and sauté garlic and onion until fragrant.
- 2Add pork shoulder and liver, cooking until browned on all sides.
- 3Stir in tomato sauce and cook for 2 minutes.
- 4Add broth, salt, and pepper, then bring to a boil and simmer for 30 minutes.
- 5Add potatoes and chickpeas, simmering for another 20-25 minutes until potatoes are tender.
- 6Taste and adjust seasonings as needed, then serve hot.
