Ingredients

  • •1 lb frozen shrimp, thawed
  • •2 medium zucchini, diced
  • •1 cup salsa
  • •1 cup cheddar cheese, shredded
  • •1 tsp smoked paprika
  • •2 tbsp olive oil
  • •1 can black beans, drained

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Season shrimp with smoked paprika, salt, and pepper.
  3. 3Cook shrimp 2 minutes per side until pink; set aside.
  4. 4Sauté diced zucchini in same pan for 4 minutes until tender.
  5. 5Add black beans and salsa; stir and heat through for 2 minutes.
  6. 6Top bowls with shrimp and sprinkle cheddar cheese over everything.

💡 Cook zucchini until some moisture evaporates before assembling shrimp taco bowls; watery zucchini thins salsa and makes the bowl soupy.
