Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans or walnuts
  • 1/4 teaspoon salt
  • 1 cup powdered sugar for rolling

Directions

  1. 1Preheat oven to 350°F (175°C).
  2. 2Cream together softened butter and 1/2 cup powdered sugar until light and fluffy, about 2 minutes.
  3. 3Mix in vanilla extract, then stir in flour, nuts, and salt until combined.
  4. 4Roll dough into 1-inch balls and place on baking sheets.
  5. 5Bake for 12-15 minutes until cookies are light golden brown.
  6. 6Cool for 5 minutes, then roll warm cookies in powdered sugar until fully coated.
  7. 7Cool completely and roll again in powdered sugar for extra coating before serving.
