Delicate layers of crispy puff pastry, smooth pastry cream, and fresh strawberries topped with glossy icing.

Ingredients

  • 1 sheet puff pastry, thawed
  • 2 cups whole milk
  • 5 egg yolks
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 pound fresh strawberries
  • 1 cup powdered sugar
  • 2 tablespoons milk

Directions

  1. 1Preheat oven to 400°F. Place puff pastry on a baking sheet, prick with a fork, and bake for 15-18 minutes until golden and crispy. Cool completely, then cut into three equal rectangular layers.
  2. 2Heat milk in a saucepan until steaming. Whisk egg yolks with granulated sugar until pale, then whisk in cornstarch. Slowly add hot milk to egg mixture while whisking constantly.
  3. 3Return mixture to saucepan and cook over medium heat, stirring constantly, for 2-3 minutes until thickened. Stir in vanilla extract and cool completely.
  4. 4Slice strawberries in half lengthwise. Place one pastry layer on a serving plate and spread half the pastry cream on top.
  5. 5Arrange half the strawberry slices on the cream, then top with second pastry layer. Repeat with remaining cream and strawberries, then place final pastry layer on top.
  6. 6Whisk powdered sugar with milk to create a smooth icing. Drizzle or spread icing over the top pastry layer. Refrigerate until serving.
