Delicate layers of crispy puff pastry, smooth pastry cream, and fresh strawberries topped with glossy icing.

Ingredients
- •1 sheet puff pastry, thawed
- •2 cups whole milk
- •5 egg yolks
- •1/2 cup granulated sugar
- •3 tablespoons cornstarch
- •1 teaspoon vanilla extract
- •1 pound fresh strawberries
- •1 cup powdered sugar
- •2 tablespoons milk
Directions
- 1Preheat oven to 400°F. Place puff pastry on a baking sheet, prick with a fork, and bake for 15-18 minutes until golden and crispy. Cool completely, then cut into three equal rectangular layers.
- 2Heat milk in a saucepan until steaming. Whisk egg yolks with granulated sugar until pale, then whisk in cornstarch. Slowly add hot milk to egg mixture while whisking constantly.
- 3Return mixture to saucepan and cook over medium heat, stirring constantly, for 2-3 minutes until thickened. Stir in vanilla extract and cool completely.
- 4Slice strawberries in half lengthwise. Place one pastry layer on a serving plate and spread half the pastry cream on top.
- 5Arrange half the strawberry slices on the cream, then top with second pastry layer. Repeat with remaining cream and strawberries, then place final pastry layer on top.
- 6Whisk powdered sugar with milk to create a smooth icing. Drizzle or spread icing over the top pastry layer. Refrigerate until serving.
