Ingredients
- •1 cup millet
- •2 cups vegetable broth
- •1 lb large shrimp, peeled and deveined
- •2 tablespoons olive oil
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •2 cups cucumber, diced
- •3 tablespoons sesame oil
- •2 tablespoons rice vinegar
- •1 tablespoon fresh ginger, minced
- •2 cloves garlic, minced
- •2 tablespoons soy sauce
- •1 tablespoon sesame seeds
Directions
- 1Rinse millet and cook in vegetable broth over medium heat for 20 minutes until tender and liquid is absorbed. Fluff with a fork.
- 2While millet cooks, whisk together sesame oil, rice vinegar, minced ginger, garlic, and soy sauce in a small bowl to make the dressing.
- 3Pat shrimp dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat.
- 4Cook shrimp for 2-3 minutes per side until pink and cooked through.
- 5Divide cooked millet between two bowls and top with grilled shrimp and diced cucumber.
- 6Drizzle sesame ginger dressing over each bowl and garnish with sesame seeds before serving.
