Mini Beef Sliders
Juicy smashed beef patties topped with melted American cheese, caramelized onions, and special sauce, all nestled in soft slider buns — these two-bite burgers are an absolute party showstopper that guests will fight over.
⏱ 50 minServes 6American
Ingredients
- •1.5 lb lean ground beef (80/20)
- •12 slider buns or dinner rolls (12-pack, e.g., Hawaiian rolls)
- •6 American cheese slices, halved
- •2 yellow onions, thinly sliced
- •3 tbsp unsalted butter
- •to taste salt and black pepper
- •¼ cup mayonnaise
- •2 tbsp ketchup
- •1 tbsp yellow mustard
- •1 tbsp sweet pickle relish
- •¼ tsp garlic powder
- •as needed dill pickle chips and shredded iceberg lettuce, for serving
Directions
- 1Make the special sauce by whisking mayonnaise, ketchup, mustard, relish, and garlic powder together; refrigerate until needed.
- 2Melt 2 tbsp butter in a large cast-iron or heavy skillet over medium-low heat; add onions with a pinch of salt and cook, stirring occasionally, 20–25 minutes until deeply golden and caramelized.
- 3Divide ground beef into 12 equal balls (about 55 g each) and season generously with salt and pepper.
- 4Wipe out the skillet, raise heat to medium-high, and add remaining butter; working in batches, place beef balls in the pan and smash flat with a spatula, pressing firmly for 10 seconds.
- 5Cook smashed patties 2 minutes until edges are brown and crispy, then flip, immediately top each with a half slice of cheese, and cook 1 minute more.
- 6Split slider buns and toast the cut sides in the same pan for 1 minute until lightly golden.
- 7Spread special sauce on both bun halves, place a cheesy patty on each bottom bun, and top with a small pinch of caramelized onion, a pickle chip, and a tuft of shredded lettuce.
- 8Cap with the top buns and serve immediately on a platter.
💡 The smash-and-sear technique gives you crispy, lacy edges and is the reason these sliders taste restaurant-quality. Hawaiian rolls (sold in 12-packs at most Canadian grocery stores) are the ideal bun — soft, slightly sweet, and the perfect size.
