Miso Ramen

Ingredients
- •4 cups chicken or vegetable broth
- •3 tablespoons miso paste
- •1 tablespoon soy sauce
- •1 tablespoon sesame oil
- •1 teaspoon minced garlic
- •1 teaspoon grated ginger
- •2 portions fresh or dried ramen noodles
- •2 soft-boiled eggs, halved
- •1 cup fresh spinach or bok choy
- •4 slices cooked chicken breast or pork
- •2 tablespoons sliced green onions
- •1 sheet nori seaweed, sliced
Directions
- 1Heat broth in a large pot over medium-high heat and bring to a simmer.
- 2Stir in garlic and ginger, then cook for 2 minutes until fragrant.
- 3In a small bowl, dissolve miso paste with a ladle of warm broth, then stir back into the pot.
- 4Add soy sauce and sesame oil to the broth and simmer for 5 minutes.
- 5Cook ramen noodles according to package directions in a separate pot, then drain and rinse.
- 6Divide noodles between two bowls and pour the hot miso broth over them.
- 7Top each bowl with spinach, chicken, egg halves, green onions, and nori seaweed.
