Miso Soup

A silky, savory Japanese soup with tofu and seaweed that's deeply comforting and ready in minutes.

Ingredients

  • 4 cups water or dashi stock
  • 3 tablespoons miso paste
  • 1 block silken tofu, cubed
  • 2 sheets nori seaweed, cut into strips
  • 3 stalks green onion, sliced
  • 2 tablespoons wakame seaweed, dried
  • 1 teaspoon sesame oil
  • to taste salt and white pepper

Directions

  1. 1Bring water or dashi stock to a simmer in a large pot over medium heat.
  2. 2Add wakame seaweed and cook for 2 minutes until softened.
  3. 3In a small bowl, dissolve miso paste with a ladle of hot broth, then stir the mixture back into the pot.
  4. 4Gently add tofu cubes and simmer for 3-4 minutes without boiling.
  5. 5Remove from heat and stir in sesame oil.
  6. 6Ladle into bowls and top with nori strips and green onion. Serve immediately.
