Mixed Berry Tart
A buttery pastry shell filled with silky vanilla custard and topped with fresh, glistening berries.

Ingredients
- •1 cup all-purpose flour
- •6 tablespoons cold butter, cubed
- •2 tablespoons sugar
- •1 pinch salt
- •1 cup whole milk
- •3 egg yolks
- •3 tablespoons cornstarch
- •1 teaspoon vanilla extract
- •2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- •3 tablespoons apricot jam
Directions
- 1Mix flour, sugar, and salt; cut in cold butter until mixture resembles breadcrumbs. Add 2-3 tablespoons ice water until dough forms. Press into a 9-inch tart pan and bake at 375°F for 12 minutes until lightly golden.
- 2Heat milk until steaming. Whisk egg yolks with cornstarch and 2 tablespoons sugar, then slowly add hot milk while whisking constantly. Return mixture to stovetop and cook over medium heat, stirring until thick, about 2 minutes. Remove from heat and stir in vanilla extract.
- 3Pour warm custard into the pre-baked tart shell and refrigerate for at least 20 minutes until set.
- 4Arrange fresh mixed berries on top of the custard in a decorative pattern.
- 5Heat apricot jam with 1 tablespoon water until smooth, then brush gently over the berries for a glossy finish. Serve chilled.
