Mixed Berry Tart

Ingredients

  • 1 cup all-purpose flour
  • 6 tablespoons cold butter, cubed
  • 2 tablespoons sugar
  • 1 pinch salt
  • 1 cup whole milk
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 3 tablespoons apricot jam

Directions

  1. 1Mix flour, sugar, and salt; cut in cold butter until mixture resembles breadcrumbs. Add 2-3 tablespoons ice water until dough forms. Press into a 9-inch tart pan and bake at 375°F for 12 minutes until lightly golden.
  2. 2Heat milk until steaming. Whisk egg yolks with cornstarch and 2 tablespoons sugar, then slowly add hot milk while whisking constantly. Return mixture to stovetop and cook over medium heat, stirring until thick, about 2 minutes. Remove from heat and stir in vanilla extract.
  3. 3Pour warm custard into the pre-baked tart shell and refrigerate for at least 20 minutes until set.
  4. 4Arrange fresh mixed berries on top of the custard in a decorative pattern.
  5. 5Heat apricot jam with 1 tablespoon water until smooth, then brush gently over the berries for a glossy finish. Serve chilled.
