Ingredients
- •2 cups fine semolina
- •1 cup all-purpose flour
- •1 tsp salt
- •1 1/4 cups warm water
- •1/2 cup olive oil
Directions
- 1Mix semolina, flour, salt, and warm water into a smooth soft dough.
- 2Knead for 8 minutes, then cover and rest for 20 minutes.
- 3Divide into six balls and coat each lightly with olive oil.
- 4Stretch each ball very thin, brush with oil, and fold into a compact square.
- 5Rest the folded squares for 10 minutes, then flatten gently.
- 6Cook on a hot griddle for 3–4 minutes per side until browned and layered.
