Ingredients

  • 2 cups fine semolina
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 1/4 cups warm water
  • 1/2 cup olive oil

Directions

  1. 1Mix semolina, flour, salt, and warm water into a smooth soft dough.
  2. 2Knead for 8 minutes, then cover and rest for 20 minutes.
  3. 3Divide into six balls and coat each lightly with olive oil.
  4. 4Stretch each ball very thin, brush with oil, and fold into a compact square.
  5. 5Rest the folded squares for 10 minutes, then flatten gently.
  6. 6Cook on a hot griddle for 3–4 minutes per side until browned and layered.

💡 Oil the work surface instead of adding flour; flour between the layers makes mlawi dry rather than flaky.
