Moi Moi (Nigerian Steamed Bean Pudding)
Nigerian black-eyed pea pudding blended with pepper, onion, and palm oil, then steamed until firm and tender.

Ingredients
- •2 cups black-eyed peas, soaked 30 minutes
- •1 red bell pepper, chopped
- •1 medium yellow onion, chopped
- •1 fresh chili, chopped
- •1/3 cup palm oil
- •2 cups water
- •1 1/2 tsp salt
Directions
- 1Soak the black-eyed peas for 30 minutes, then drain well.
- 2Blend peas, bell pepper, onion, chili, water, and salt until very smooth.
- 3Blend in palm oil just until incorporated.
- 4Pour the mixture into eight greased heatproof cups.
- 5Steam covered for 50–60 minutes until the centres are firm.
- 6Rest for 10 minutes before unmoulding or serving in the cups.
