Moin Moin

Ingredients
- •2 cups dried black-eyed peas (soaked and peeled)
- •1 medium onion, chopped
- •3 red bell peppers, chopped
- •2 tablespoons vegetable oil
- •3 cloves garlic, minced
- •1 teaspoon ground ginger
- •6 hard-boiled eggs, halved
- •1 teaspoon salt
- •½ teaspoon cayenne pepper
- •¾ cup water
Directions
- 1Blend the soaked and peeled black-eyed peas with onion, bell peppers, garlic, ginger, salt, cayenne pepper, and water until smooth.
- 2Heat oil in a pan and fry the blended mixture for 2 minutes, stirring constantly, then remove from heat.
- 3Pour half of the mixture into oiled custard cups or heat-safe containers, place one egg half in the center of each, then top with remaining mixture.
- 4Arrange the filled cups in a pot with about 2 inches of water, cover with aluminum foil, and steam for 30-35 minutes.
- 5Remove from heat and let cool slightly before unmolding onto a serving plate.
