Moin Moin

A creamy, protein-rich steamed bean cake flavored with spices, peppers, and hard-boiled eggs, popular across West Africa.

Ingredients

  • 2 cups dried black-eyed peas (soaked and peeled)
  • 1 medium onion, chopped
  • 3 red bell peppers, chopped
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 6 hard-boiled eggs, halved
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • ¾ cup water

Directions

  1. 1Blend the soaked and peeled black-eyed peas with onion, bell peppers, garlic, ginger, salt, cayenne pepper, and water until smooth.
  2. 2Heat oil in a pan and fry the blended mixture for 2 minutes, stirring constantly, then remove from heat.
  3. 3Pour half of the mixture into oiled custard cups or heat-safe containers, place one egg half in the center of each, then top with remaining mixture.
  4. 4Arrange the filled cups in a pot with about 2 inches of water, cover with aluminum foil, and steam for 30-35 minutes.
  5. 5Remove from heat and let cool slightly before unmolding onto a serving plate.
