Molasses Cookies

Ingredients
- •3/4 cup vegetable shortening
- •1 cup granulated sugar
- •1 egg large egg
- •1/4 cup molasses
- •2 cups all-purpose flour
- •2 teaspoons baking soda
- •1 teaspoon ground cinnamon
- •1/2 teaspoon ground ginger
- •1/4 teaspoon ground cloves
- •1/4 teaspoon salt
- •2 tablespoons granulated sugar for rolling
Directions
- 1Preheat oven to 350°F. In a large bowl, cream together shortening and 1 cup sugar until light and fluffy, about 2 minutes.
- 2Beat in egg and molasses until well combined.
- 3In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt. Gradually add dry ingredients to wet ingredients and mix until just combined.
- 4Roll dough into 1-inch balls and coat with sugar for rolling.
- 5Place cookies 2 inches apart on a greased baking sheet.
- 6Bake for 10-12 minutes until edges are set but centers are still soft.
- 7Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
