Molten Chocolate Cake

Ingredients

  • 6 oz dark chocolate, chopped
  • 6 tablespoons unsalted butter
  • 2 large eggs
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • butter and cocoa powder for ramekins

Directions

  1. 1Preheat oven to 425°F and butter four 6-oz ramekins, dusting with cocoa powder.
  2. 2Melt chocolate and butter together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  3. 3Whisk eggs, egg yolks, and sugar until pale and thick, about 3 minutes.
  4. 4Gently fold the chocolate mixture into the eggs, then fold in flour, salt, and vanilla until just combined.
  5. 5Divide batter evenly among prepared ramekins.
  6. 6Bake for 12-14 minutes until the edges are firm but the center still jiggles slightly when gently shaken.
  7. 7Let cool for 1 minute, then invert onto serving plates and serve immediately with vanilla ice cream or whipped cream.
