Mongolian Beef

Ingredients

  • 1.5 lbs flank steak, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil
  • 4 scallions chopped
  • 1/4 cup water
  • 1 tablespoon rice vinegar

Directions

  1. 1Toss beef with cornstarch and salt to coat evenly.
  2. 2Heat oil in a large skillet or wok over medium-high heat.
  3. 3Working in batches, cook beef until browned, 2-3 minutes per batch, then set aside.
  4. 4In the same skillet, add garlic and ginger, cooking for 30 seconds until fragrant.
  5. 5Combine soy sauce, brown sugar, water, and rice vinegar, then pour into the skillet with red pepper flakes.
  6. 6Return beef to the skillet and simmer for 2-3 minutes until sauce thickens.
  7. 7Top with chopped scallions and serve over rice.
