Mongolian Beef
Tender beef strips coated in a savory-sweet soy and garlic sauce, served over rice with crispy scallions.

Ingredients
- •1.5 lbs flank steak, thinly sliced
- •1/4 cup soy sauce
- •2 tablespoons brown sugar
- •3 cloves garlic, minced
- •1 tablespoon ginger, minced
- •1/4 teaspoon red pepper flakes
- •2 tablespoons cornstarch
- •3 tablespoons vegetable oil
- •4 scallions chopped
- •1/4 cup water
- •1 tablespoon rice vinegar
Directions
- 1Toss beef with cornstarch and salt to coat evenly.
- 2Heat oil in a large skillet or wok over medium-high heat.
- 3Working in batches, cook beef until browned, 2-3 minutes per batch, then set aside.
- 4In the same skillet, add garlic and ginger, cooking for 30 seconds until fragrant.
- 5Combine soy sauce, brown sugar, water, and rice vinegar, then pour into the skillet with red pepper flakes.
- 6Return beef to the skillet and simmer for 2-3 minutes until sauce thickens.
- 7Top with chopped scallions and serve over rice.
