Moong Dal Khichdi (Indian Lentil Rice)

Ingredients
- •200 g basmati rice
- •150 g moong dal
- •1 tsp cumin
- •1/2 tsp turmeric
- •1 tbsp ghee
- •900 ml water
Directions
- 1Rinse the rice and moong dal together until the water runs clear.
- 2Heat the ghee in a heavy pot and add the cumin, waiting until the seeds darken and smell toasted.
- 3Add the drained rice and dal with the turmeric and stir for one minute to coat.
- 4Pour in the water, season with salt, and bring to a boil.
- 5Lower the heat, cover, and cook twenty minutes until everything is soft and beginning to collapse.
- 6Rest off the heat for ten minutes, then stir and loosen with hot water if needed.
💡 Khichdi is meant to be soft and loose, not separate like a pilaf. If it looks stiff, stir in more hot water.
