Moong Dal Khichdi (Indian Lentil Rice)

Ingredients

  • 200 g basmati rice
  • 150 g moong dal
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1 tbsp ghee
  • 900 ml water

Directions

  1. 1Rinse the rice and moong dal together until the water runs clear.
  2. 2Heat the ghee in a heavy pot and add the cumin, waiting until the seeds darken and smell toasted.
  3. 3Add the drained rice and dal with the turmeric and stir for one minute to coat.
  4. 4Pour in the water, season with salt, and bring to a boil.
  5. 5Lower the heat, cover, and cook twenty minutes until everything is soft and beginning to collapse.
  6. 6Rest off the heat for ten minutes, then stir and loosen with hot water if needed.

💡 Khichdi is meant to be soft and loose, not separate like a pilaf. If it looks stiff, stir in more hot water.
