Moong Dal Tadka

Ingredients

  • 1 cup yellow moong dal (split mung beans)
  • 3 cups water
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons ghee or vegetable oil
  • 1 teaspoon cumin seeds
  • 2 dried red chili peppers
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 onion, finely chopped

Directions

  1. 1Rinse moong dal thoroughly and cook with 3 cups water and turmeric powder for 15-20 minutes until soft and creamy.
  2. 2Mash the cooked dal lightly with a spoon until you reach a semi-smooth consistency.
  3. 3Heat ghee in a separate pan and add cumin seeds and dried red chilies; let them splutter for 30 seconds.
  4. 4Add minced garlic and ginger, sauté for 1 minute until fragrant.
  5. 5Add chopped onion and cook until golden brown, about 3-4 minutes.
  6. 6Pour this tempering mixture into the cooked dal and stir well.
  7. 7Add salt and black pepper, then simmer for 3-4 minutes on low heat.
  8. 8Garnish with fresh cilantro and serve hot with rice or Indian bread.
