Moroccan Chicken Couscous

Tender chicken and vegetables simmered in aromatic spices, served over fluffy couscous with a rich broth.

Ingredients

  • 1.5 lbs chicken breast, cut into chunks
  • 2 cups chicken broth
  • 1.5 cups couscous
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 3 tablespoons olive oil
  • to taste salt and pepper

Directions

  1. 1Heat olive oil in a large pot and sauté onions and garlic until softened.
  2. 2Add chicken chunks and cook until browned on all sides.
  3. 3Stir in cumin, turmeric, and paprika, cooking for 1 minute until fragrant.
  4. 4Add chicken broth, carrots, and zucchini, then bring to a boil and simmer for 20 minutes until chicken is cooked through.
  5. 5Season with salt and pepper to taste.
  6. 6In a separate pot, bring 2.5 cups water to a boil, add couscous and olive oil, then remove from heat and cover for 5 minutes.
  7. 7Fluff couscous with a fork and divide among serving bowls.
  8. 8Ladle chicken and vegetables with broth over the couscous and serve hot.
