Moroccan Vegetable Tagine
A fragrant North African stew of tender vegetables, chickpeas, and dried fruits simmered in warm spices and served over couscous.

Ingredients
- •2 tablespoons olive oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •1 teaspoon ground cumin
- •1 teaspoon ground paprika
- •½ teaspoon ground ginger
- •¼ teaspoon cayenne pepper
- •2 cups diced sweet potato
- •2 cups diced zucchini
- •1 can (15 oz) chickpeas, drained and rinsed
- •1 cup diced dried apricots
- •1½ cups vegetable broth
- •¼ teaspoon salt
Directions
- 1Heat olive oil in a large pot or tagine over medium heat and sauté diced onion until softened, about 5 minutes.
- 2Add minced garlic and cook for 1 minute, then stir in cumin, paprika, ginger, and cayenne pepper and cook for 1 minute until fragrant.
- 3Add sweet potato and zucchini, stir well to coat with spices, and cook for 5 minutes.
- 4Pour in vegetable broth and add chickpeas, dried apricots, and salt.
- 5Bring to a simmer, reduce heat to medium-low, cover, and cook for 25 minutes until vegetables are tender.
- 6Taste and adjust seasonings as needed.
- 7Serve hot over couscous or with crusty bread.
