Moroccan Vegetable Tagine

A fragrant North African stew of tender vegetables, chickpeas, and dried fruits simmered in warm spices and served over couscous.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • ½ teaspoon ground ginger
  • ¼ teaspoon cayenne pepper
  • 2 cups diced sweet potato
  • 2 cups diced zucchini
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup diced dried apricots
  • 1½ cups vegetable broth
  • ¼ teaspoon salt

Directions

  1. 1Heat olive oil in a large pot or tagine over medium heat and sauté diced onion until softened, about 5 minutes.
  2. 2Add minced garlic and cook for 1 minute, then stir in cumin, paprika, ginger, and cayenne pepper and cook for 1 minute until fragrant.
  3. 3Add sweet potato and zucchini, stir well to coat with spices, and cook for 5 minutes.
  4. 4Pour in vegetable broth and add chickpeas, dried apricots, and salt.
  5. 5Bring to a simmer, reduce heat to medium-low, cover, and cook for 25 minutes until vegetables are tender.
  6. 6Taste and adjust seasonings as needed.
  7. 7Serve hot over couscous or with crusty bread.
