Mu Saengchae (Korean Spicy Radish Salad)

Ingredients

  • 1 1/2 lb daikon radish, julienned
  • 1 1/2 tbsp gochugaru
  • 2 tbsp rice vinegar
  • 1 tsp granulated sugar
  • 1 clove garlic, minced
  • 2 green onions, sliced
  • 1 tsp sesame oil
  • 3/4 tsp salt
  • 1 tsp sesame seeds

Directions

  1. 1Toss the julienned daikon with salt and let it stand for 5 minutes.
  2. 2Drain off any released liquid without squeezing the radish.
  3. 3Add gochugaru, rice vinegar, sugar, and garlic.
  4. 4Toss until every strand is evenly seasoned.
  5. 5Add green onions, sesame oil, and sesame seeds.
  6. 6Serve immediately or chill for 10 minutes.

💡 Drain rather than squeeze the salted radish so it stays crisp.
