Mujadara

A hearty and aromatic Middle Eastern dish of lentils and rice topped with crispy caramelized onions.

Ingredients

  • 1 cup brown lentils
  • 3/4 cup long-grain rice
  • 4 cups vegetable broth
  • 4 medium onions, sliced
  • 1/4 cup olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground coriander
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro or parsley, chopped

Directions

  1. 1Rinse lentils and add to a pot with vegetable broth. Bring to a boil, then simmer for 15 minutes.
  2. 2Add rice, cumin, coriander, salt, pepper, and garlic to the pot. Stir well and simmer for 20 minutes until lentils and rice are tender and liquid is absorbed.
  3. 3While the lentil mixture cooks, heat olive oil in a large skillet over medium heat.
  4. 4Add sliced onions to the skillet and cook, stirring occasionally, for 25-30 minutes until deeply browned and caramelized.
  5. 5Transfer the lentil and rice mixture to a serving dish.
  6. 6Top with the caramelized onions and garnish with fresh cilantro or parsley. Serve hot with yogurt on the side.
