Mujadara
A hearty and aromatic Middle Eastern dish of lentils and rice topped with crispy caramelized onions.

Ingredients
- •1 cup brown lentils
- •3/4 cup long-grain rice
- •4 cups vegetable broth
- •4 medium onions, sliced
- •1/4 cup olive oil
- •2 teaspoons ground cumin
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1/2 teaspoon ground coriander
- •2 cloves garlic, minced
- •2 tablespoons fresh cilantro or parsley, chopped
Directions
- 1Rinse lentils and add to a pot with vegetable broth. Bring to a boil, then simmer for 15 minutes.
- 2Add rice, cumin, coriander, salt, pepper, and garlic to the pot. Stir well and simmer for 20 minutes until lentils and rice are tender and liquid is absorbed.
- 3While the lentil mixture cooks, heat olive oil in a large skillet over medium heat.
- 4Add sliced onions to the skillet and cook, stirring occasionally, for 25-30 minutes until deeply browned and caramelized.
- 5Transfer the lentil and rice mixture to a serving dish.
- 6Top with the caramelized onions and garnish with fresh cilantro or parsley. Serve hot with yogurt on the side.
