Mushrooms on Toast

Sautéed garlic and thyme mushrooms served on crispy buttered toast, a classic British breakfast favorite.

Ingredients

  • 400g button mushrooms, sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 4 slices bread
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • to taste salt and black pepper
  • 1 tablespoon fresh parsley, chopped

Directions

  1. 1Toast the bread slices until golden brown and butter them generously.
  2. 2Heat butter and olive oil in a large skillet over medium-high heat.
  3. 3Add minced garlic and thyme, cook for 30 seconds until fragrant.
  4. 4Add sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until golden and tender.
  5. 5Stir in heavy cream and simmer for 2 minutes until the sauce thickens slightly.
  6. 6Season with salt and pepper to taste.
  7. 7Spoon the creamy mushroom mixture over the buttered toast and garnish with fresh parsley.
